The fact that the Three Chimneys has been voted in the world’s top 20 restaurants is a remarkable achievement, though it starts to make sense when you meet the inspirational lady who started it all, Shirley Spear. She and her husband Eddie took these old crofters' cottages on the waterfront in a remote corner of the Isle of Skye, and, through a mixture of sheer determination and excellent self-taught cooking, forged their way on to the culinary map. At the heart of their success is the genuinely local seasonal produce they use, right down to the local flowers they deploy in some dishes. They are on first-name terms with most of their suppliers, and the attention to detail is phenomenal. Shirley no longer cooks, but Masterchef finalist Scott Davies has taken up the mantle moist recently – and for repeat visitors, yes, the hot marmalade pudding with Drambuie custard is still on the menu! A table is automatically guaranteed upon booking – and you really couldn’t do much better if you were looking for a short break to celebrate a special occasion.
