Given the world-class local produce, eating out in the Scottish Borders can sometimes be a disappointment. Not so at the Horseshoe Inn, a historic bolthole that these days styles itself as an en vogue ‘restaurant with rooms’. And what a restaurant it is, with the finest of local ingredients brought to life with lots of culinary twists and adventure. King scallops come curried, parsnips in a veloute with seared ox tongue, then beef more conventionally cooked with Scotland’s hippest boutique beer of the moment, Innis & Gunn. Amuse bouches, petit fours and smooth service complete a decadent mix, and there's a less formal bistro on hand too. The rooms are cosy rather than spacious, with comfortable beds laden in lavish linen and the bathrooms come with Molton Brown toiletries. Free wifi throughout.
