Long before Modern Scottish became the hottest
thing on the Edinburgh dining scene the Stac Polly people were offering the
best of local ingredients with a creative twist. Their bistro, handily located
just off the Royal Mile, continues the tradition with honest, simple food that
is well cooked with a little imagination. The dining spaces are relaxed and
welcoming – choose from a window table as you come in or an even cosier space
in the back. Walls are bedecked in Scottish art and prints, with the focus staying
very much local on the plate with the likes of smoked salmon and Arbroath
Smokie roulade spiced up with a hint of wasabi mayonnaise, or five spiced
salmon, black bean cake, broccoli, lemon and chive crème fraiche.
