Working to protect stocks of European lobsters from over-fishing, The National Lobster Hatchery is a marine conservation charity working to boost the lobster population of Cornwall. However, looking beyond just lobsters, it's a science and education centre researching key sustainability issues faced by our fisheries. Not only can you get to see lobsters at various stages of their development, if you are really taken with them, you can adopt a lobster from £2.50 and check the website for details of its release into the sea.
